India’s rich and diverse culinary heritage is a constant source of inspiration for me. I love experimenting with traditional Indian flavors and infusing them into modern cocktails. I’ve been particularly excited about combining the Indian spices and regional fruits from different parts of India like adding smoky flavors of charcoal-grilled pineapple with the floral notes of rose and the spice of black pepper. It’s a surprising and delicious combination that showcases the versatility of Indian ingredients. Hitchki’s focus on creativity really encourages me to try new things and experiment. To strike this balance, I begin by experimenting with different ingredients and techniques. I’m constantly exploring new flavor combinations, playing with textures, and pushing the boundaries of traditional cocktail-making. I pay close attention to the presentation of the drink. The choice of glassware, the selection of garnishes, and the overall aesthetic are all crucial elements in creating a memorable cocktail experience for customers.

One of my most memorable creations is the “Jab V Met.” This cocktail embodies my love for Indian flavors and modern mixology. It combines the tangy sweetness of Kairi Panna with the floral notes of Butterfly Pea Flower Syrup. The addition of Aamchur powder adds a unique dimension of sourness and spice, creating a complex and refreshing taste profile.

One of the most surprising ingredients I’ve incorporated into a cocktail is the humble Indian spice, Ajwain. I’ve used it to create a unique twist on a classic Old Fashioned. The subtle, almost minty flavor of Ajwain adds a complex layer of aroma and taste to the drink.

The reaction from our patrons has been overwhelmingly positive. Many were initially intrigued by the unusual ingredient but were pleasantly surprised by the flavor profile.
